More $5 Dinners

After several requests on my How I Keep Our Household Budget Under $300 a Month series, I’ve decided to post a few more $5 recipes from my trusty Recipe Binder.


Teriyaki Veggie Fajitas

  • 2 Green Peppers, thinly sliced
  • 1 Onion, thinly sliced
  • 3-4 garlic cloves, minced
  • 2 tsp olive oil
  • 1 box Mushrooms, sliced
  • Generous Dash of Teriyaki Sauce
  • 8-inch Tortillas
  • Cheese and Sour Cream to taste

Saute peppers, onion, and garlic in oil for about 2 minutes.  Add mushrooms and fry until vegetables are tender.  Stir in Teriyaki sauce, spoon veggie mix into tortillas, and top with cheese and sour cream.  Serves 4.


Beefy Noodle Dinner

  • 1 lb Ground Beef
  • 12 oz Rotini Pasta
  • 1 Green Bell Pepper (opt)
  • 2 cloves garlic, minced
  • 14 oz can of Coconut Milk
  • 1 Tbl Cumin
  • Salt & Pepper to taste
  • 2 Tbl dried Parsley

Cook Rotini pasta according to package directions.  Brown beef with garlic and green pepper and drain. Mix with coconut milk and seasonings and simmer until heated through.  Serves 6.


Easy Spaghetti & Meatball Night

  • 1 pkg of Aldi’s turkey Italian meatballs (under $4!)
  • 1 jar pasta sauce, doctored with extra Italian seasoning, salt, pepper, and oregano
  • 1 pkg Spaghetti (we prefer whole wheat spaghetti, but it’s a bit more expensive)

Bake meatballs according to package directions (for just the boys, my husband and I, half the package is plenty!), cook pasta, and heat the sauce  over the stove, mixing with seasonings until you’re happy with the flavor.  Serve alongside a salad or green vegetable.  Serves 4-8
